Campfire Cooking: Speedy Gonzalez Tacos

What’s that, dear? My turn to cook? Again? But, honey, I cooked last year! Fine. Enjoy your afternoon walk in the woods. And don’t worry. I’ll come up with something. Something like maybe … Speedy Gonzalez Tacos!

Serves: 4

Preparation time: 15-20 minutes

Ingredients:

2 lbs pre-cooked hamburger (cook at home, freeze)

4 medium / large potatoes

1 package shredded cheese

1 package taco seasoning

1 package sour cream

foil wrap

Instructions:

1. Remove pre-cooked hamburger from refrigeration.

2. Cut potatoes into cubes, place in foil packet, and place on campfire for 30 minutes.

3. Place thawed hamburger in pan on camp stove, add 1 cup of water & taco seasoning, and let simmer.

4. Place potatoes, hamburger in a large bowl, top with shredded cheese, sour cream, and any other desired taco items.

Yes, they are good, aren’t they? Thank you, sweetheart. It was nothing, no trouble at all. Lucky thing I brought along my recipe book!
