Campfire Cooking: Blazing Saddle Beans

Well, that was certainly quite an adventure, Henry and Alice: Into The Wild. But all good things must come to an end, and now it’s time to pack up and hit the trail. Before we go, one final recipe to share: Blazing Saddle Beans. No campsite cookbook would be the same without ’em.

Serves: 8

Preparation time: 4 hours


dry beans (kidney, white, pinto)

1 1/4 to 1 1/2 lbs hamburger

1 lb hot sausage

1 green pepper, diced

1 large onion, diced

powdered garlic

hot banana peppers, diced

seasoning salt

2 packages chili seasoning (regular, hot, mild)



1. Place beans in pan with water, boil for 30 minutes, simmer for 3 hrs until soft.

2. Brown the hot sausage and hamburger in a skillet.

3. Dice the green pepper, onion, banana peppers.

4. Add to soft beans, the banana peppers, green peppers, onion, sausage, hamburger, garlic, seasoning salt, chili seasoning and water.

5. Simmer for 30 minutes. Serve.
